The lot undergoes an innovative Thermal Shock Anaerobic fermentation. The cherries are first heated up and then rapidly cooled to -2C inducing thermal shockin the fermentation. The lab backed process goes into the detail of understanding the total volume of flavour producing microorganisms and controlling them for consistency and uniformity.
